“Zacusca”. I like even the name! I don’t think there is anyone who doesn’t know this taste, this food, especially students, (when the money for food from mother are spent on parties) is a blessing when you find a jar in the refrigerator. And in addition is healthy, as he taste.
Here’s the recipe for four jars (which will be your save in critical moments: P):
Ingredients:
1.5 kilograms eggplant
1 kg bell pepper
1 kg tomatoes
150 g onion
2.3 cloves of garlic
1 teaspoon paprika
100 g oil
1 tablespoon sugar
Salt
Black pepper berries
Preparation:
The eggplant and the bell peppers are bake and leave to drain. The eggplants are hashed and the bell peppers are cut into thin strips. The tomatoes are immersed in hot water, clean the shell and pass through a sieve. The clean onion, is cutted. Heat the oil, then add the onion and garlic, cleaned and pressed. Add salt, paprika, pepper beans, sugar, then eggplant, tomatoes and bell peppers. For three minutes leave it on big fire, and then on low one until oil is taken from above. Place in jars and add over a spoon of hot oil. After cooled (15 minutes), close the jars, and boil 25 minutes longer in a vase of water. In 150 minutes, “zacusca” will be ready!
